Physico - chemical properties of almond oil
Session
Food Science and Technology
Description
Fats and oils are a significant food source for human, and are supplying essential fatty acids like linoleic acids. Fats and oils are also applied for producing drug dispersants in therapeutics and play important functional and sensory roles in food product. We have researched the physico-chemical properties of almond oil of these three different productions: Gentipharm (Kosova), PhitoPharm (Macedonia), Hemani (Pakistan). After the determination we have come to conclusion that for almond oil of Heman productions the values earned are in standards just for acid number, soap number, ester number, but for the iodine number we have deviation, so this oil was spoiled. For almond oil of Phitopharm productions the values earned are in standards just for acid number, but for the soap number, ester number and iodine number we have a deviation. The values earned for almond oil of Gentipharm productions are like values of Phitopharm, therefore we concluded that these oils were spoiled.
