DETERMINATION OF NITROGEN IN POTATO PRODUCTS AND ITS ROLE IN THE FOOD QUALITY OF CIPS VIPA PRODUCTS

In modern times more and more people consume processed foods. This is due to the fact that these foods are convenient and easy. to be transported. Based on this fact, it is necessary for food products to meet the standards related to storage, both in the processing plant and in food markets.
The object of study in our work was the determination of nitrogen in potatoes products and specifically in the products of Sweet Chips, Ketchup Chips and Classic Chips, which are products of the Pestova Factory in Vushtrri, Republic of Kosovo. The types of chips analyzed were of different weights from 20g, 35g and 140g. The measurements were made in September and October of the Year 2021.
Determination of the oxygen in the chips packages was done in order to have a clear picture of the role of the quality of the chips, which are traded in the market of the Republic of Kosovo and beyond. In order to know the quality indirectly, the amount of nitrogen is calculated, which plays a key role in the quality of the products. For this, 180 oxygen measurements were performed and than was calculated the amount of nitrogen in the analyzed packages.
The minimum values of oxygen measured were 0.68% in the Sweet Chips of 35g, while the maximum amount of oxygen was in the value of 0.94 in the Sweet Chips dated 22.09.2021 weighing 20g. Whereas the amount of nitrogen calculated in the same samples is: the minimum amount is 99.06% and the maximum is 99.32%. Based on the results obtained, we consider that these products can be marketed because they meet the appropriate standards.
